Artichoke (Jerusalem) 500g

Always lovely to see the Jerusalem Artichokes in flower (not to be confused with the Globe Artichokes) Belonging to the sunflower family it is the plant's small knobbly underground tubers that are eaten. They have a creamy texture and nutty, earthy flavour. The tubers are harvested a few weeks after the first frost when the the plant begins to wither. They can be eaten raw, steamed, roasted, fried or added to soups stews and stir fries.
